Vegetable Skewers with Balsamic Vinaigrette

The perfect addition to the BBQ. Take the skewers uncooked to your function, pop them on the hot plate, then drizzle with Balsamic Vinaigrette, for a low calorie side dish or for the main event.

 

INGREDIENTS 

serves 4

 

Bamboo skewers

Cherry tomatoes - 1 punnet 

Capsicum - orange or red

Eggplant - 1

Courgette - 1

FastFx Balsamic Vinaigrette - 2Tbs      

Italian parsley - chopped finely

Olive oil - 1 Tbs 

Salt & pepper

 

INSTRUCTIONS

 

Soak bamboo skewers in cold water while preparing ingredients (this helps to stop them burning).

Cut capsicum in half & remove the seeds, slice into thick pieces.

Thickly slice eggplant & courgette.

Thread vegetables onto the skewer alternating tomato, capsicum, eggplant & courgette.

Continue until all vegetables are on skewers.

Brush vegetable skewers with olive oil.

Season with salt & pepper.

Grill in the oven for 10-15 minutes or cook for 5-10 minutes on a hot BBQ.

Drizzle with FastFx Balsamic Vinegar & sprinkle on herbs to serve.
